Chocolate Coeur à la Crème Recipe

Coeur à la Crème is essentially a no-bake cheesecake without crust. Requiring few ingredients and minimal prep time, this is an ideal dish to please any crowd for any occasion. Use a heart shaped mold to enjoy this treat as a Valentines Day dessert.

  • Ingredients for base:
  • 3 oz. bittersweet chocolate (chopped)
  • ½ pound cream cheese (room temp.)
  • 1-1/4 cup heavy cream
  • 1/3 cup powdered sugar, sifted
  • 1 teaspoon vanilla
  • Ingredients for sauce:
  • 1-10 oz. package frozen raspberries, thawed
  • 1-2 tablespoons sugar
  • 1 tablespoon Kirsch
Preparation Steps:
  1. Melt chocolate in double boiler; cool.
  2. Whip 1 cup of cream, until it reaches the soft peak stage. Set aside.
  3. Beat cream cheese until it is light and fluffy; gradually add ¼ cup cream and beat until smooth.
  4. Mix in sugar, vanilla, and melted chocolate.
  5. Gently fold whipped cream into cream cheese mixture.
  6. Line 4-cup mold with dampened cheesecloth; spoon cheese mixture into mold; place mold on rack, set over pan.
  7. Refrigerate 8 hours.
  8. Prepare raspberry sauce: Puree and strain raspberries; stir in sugar and Kirsch.
  9. Unmold coeur à la crème; serve with raspberry sauce.

I love that look on a persons face when they go "oh my gosh, I can't wait to go home and try this out" Literally, cooking changes the chemical compounds in food Figuratively, cooking changes the way you eat, it changes the way people interact together, and it changes your experience. It's in that process, where you're sitting together, you're cooking you're learning about what's being cooked, but really what's happening is you're starting to talk about life stories. It's through those life stories that you end up getting enriched yourself because it just broadens your experience Everyone has to sustain themselves and if we can do it together in the kitchen it's something that we really want to nurture in our community.
