Fresh Pineapple Salad

Refreshing and easy. This salad is great for entertaining because you can make it ahead and it holds up well in the refrigerator for hours, even overnight.

  • 1/3 cup vegetable oil
  • 3 Tbsp. white balsamic or white wine vinegar
  • 1 Tbsp. finely minced red onion
  • 1 Tbsp. fresh lime juice
  • 1/2 cup fresh cilantro, chopped
  • 1/4 tsp. ground cumin
  • salt & pepper to taste
  • 1 carrot, shredded
  • 1 red bell pepper, cut into 1" matchsticks
  • 1/2 jicama, peeled, cut into 1" matchsticks
  • 1/2 fresh pineapple, cut into bite size tidbits
Preparation Steps:
  1. In large shallow bowl, whisk together oil, vinegar, onion, 1/4 cup cilantro, lime juice, cumin and salt & pepper
  2. Add carrot, jicama and red bell pepper. Toss to thoroughly coat with dressing.
  3. Add pineapple and remaining cilantro. Gently combine.
  4. Place in serving bowl and garnish with cilantro.
This salad pairs nicely with Spicy Grilled Shrimp.
