Lobster Mac & Cheese

A classy version of a comfort food classic.

  • 1 lb. dry pasta
  • 10 oz. lobster meat, cooked & roughly chopped
  • 4 oz. butter + 2 oz. butter (1 stick + ½ stick)
  • ½ cup flour
  • 1 quart whole milk
  • 8 oz. white cheddar cheese, shredded
  • 8 oz. fontina cheese, shredded
  • 1 tsp sea salt
  • 1 tsp sweet paprika
  • ½ tsp black pepper
  • 1 tsp Worcestershire
  • 1 tsp hot sauce
  • ½ cup grated parmesan cheese
  • 1 cup panko bread crumbs
  • 1 tbsp. lemon zest
Preparation Steps:
  1. Preheat oven to 375 degrees.
  2. Cook pasta al dente, set aside.
  3. In a large saucepan, melt 1 stick butter over medium heat, add flour and cook (stirring constantly) to make a blond roux.
  4. Add milk and continue stirring until mixture comes to a boil, reduce to low. This is when you will see it thicken fully.
  5. Add cheddar, fontina, salt, pepper, paprika, Worcestershire, and hot sauce. Stir until cheese is melted and incorporated.
  6. Fold in lobster and pasta until incorporated. Transfer to a baking dish.
  7. Melt ½ stick butter. Combine with panko, lemon zest, and parmesan.
  8. Top pasta mixture with panko mixture. Bake 35 minutes or until golden brown.

When students come in for our classes they can expect great training, technique, fun, and a party! But they can pick and choose what they want We have some students that come in so they can up their game We've got other students who might come in for a Friday or Saturday night They're getting a show, they are getting technical training but they sit back, relax, sip on a glass of wine and it's their choice how much they participate. I love that look on a persons face when they go "oh my gosh, I can't wait to go home and try this out" Literally, cooking changes the chemical compounds in food Figuratively, cooking changes the way you eat, it changes the way people interact together, and it changes your experience. It's in that process, where you're sitting together, you're cooking you're learning about what's being cooked, but really what's happening is you're starting to talk about life stories. It's through those life stories that you end up getting enriched yourself because it just broadens your experience Everyone has to sustain themselves and if we can do it together in the kitchen it's something that we really want to nurture in our community. We are really, truly a community of cooks and people love it.”
