Masala Chai
Date: August 24, 2013

This authentic Indian beverage is an excellent way to start your day or to keep you warm on a cold winter night. This recipe was given to me by my dear friend, Bryanne Salazar.

  • Loose leaf black tea (Red Label, Assam)
  • 6 green Cardamom pods
  • 7 whole cloves
  • 1 tsp. whole peppercorns
  • 2 cinnamon sticks
  • 1 1/2 inch of freshly peeled ginger, cut into 2 pi
  • Sugar (to taste)
  • Heavy cream/half and half/whole milk
Preparation Steps:
  1. Using a coffee pot with a filter, brew a pot of tea (6-8 cups).
  2. Pour brewed tea into a saucepan and place on the stove on medium-high heat.
  3. Gently pop the green Cardamom pods open using your fingers or the back of a spoon. Put the whole Cardamom pods, ginger, cloves, peppercorns, and cinnamon into the tea.
  4. Bring to a soft boil, and then reduce the heat to medium-low. Allow to simmer for 10-15 minutes.
  5. Strain the tea to remove all of the spices. Sweeten to taste (this is intended to be a sweet beverage).
  6. Add enough heavy cream/half and half/whole milk to give the pot a deep caramel color (approx. 1/2-1 cup). Serve hot.

May be kept in a sealed coffee carafe or a thermos.
