No-bake Nanaimo bars

Ingredients:
  • Crust:
  • ¾ cup unsalted butter
  • ¼ cup sugar
  • Pinch of salt
  • 6 tablespoons cocoa
  • 1 egg
  • 1 tablespoon milk
  • 1 tablespoon vanilla
  • 2 cups graham cracker crumbs
  • 1 cup sweetened shredded coconut
  • ½ cup chopped walnuts
  • Middle Layer:
  • ½ cup butter, softened
  • 6 tablespoons milk
  • 4 tablespoons custard powder
  • 4 cups confectioner's sugar
  • Top Layer:
  • 8 ounces semisweet or dark chocolate
  • 1 tablespoon unsalted butter
Preparation Steps:
  1. Crust (Use Steps 2-5):
  2. Combine first 6 ingredients in a large saucepan. Heat and stir over medium-low heat until mixture is smooth. Remove from heat.
  3. Stir in graham crumbs, coconut, and walnuts.
  4. Pack firmly into ungreased 9"x13" pan.
  5. Place in the refrigerator to chill while you prepare the middle layer.
  6. Middle Layer (Use Steps 7-8):
  7. Beat all 4 ingredients together in medium bowl until smooth.
  8. Spread over first layer. Chill for 45 minutes.
  9. Top Layer (Use Steps 10-12):
  10. Melt chocolate and butter in a small bowl at 50% power in the microwave. Microwave for about 1½ minutes, stir, then microwave another 30 seconds or longer if needed, stirring frequently.
  11. Spread chocolate mixture fairly evenly over the middle layer.
  12. Chill for 1 hour, then score chocolate with a sharp knife and return to fridge to chill completely before cutting into bars.
Notes:

Chefs Note:

Scoring the chocolate just means making shallow cuts in it so that it will not chill into a solid mass which will crack when you eventually go to cut these into bars.

We've got the tool that will provide value, and also help them accomplish whatever they want to accomplish. When students come in for our classes they can expect great training, technique, fun, and a party! But they can pick and choose what they want We have some students that come in so they can up their game We've got other students who might come in for a Friday or Saturday night They're getting a show, they are getting technical training but they sit back, relax, sip on a glass of wine and it's their choice how much they participate. I love that look on a persons face when they go "oh my gosh, I can't wait to go home and try this out" Literally, cooking changes the chemical compounds in food Figuratively, cooking changes the way you eat, it changes the way people interact together, and it changes your experience. It's in that process, where you're sitting together, you're cooking you're learning about what's being cooked, but really what's happening is you're starting to talk about life stories. It's through those life stories that you end up getting enriched yourself because it just broadens your experience Everyone has to sustain themselves and if we can do it together in the kitchen it's something that we really want to nurture in our community. We are really, truly a community of cooks and people love it.”
