Shrimp Ceviche Recipe

This easy, healthy shrimp dish is sure to delight your tastebuds. With just a few ingredients and simple steps, you certainly don't want to miss this!

  • 2 pounds large shrimp – peeled, deveined, chopped
  • 1 cup fresh lime juice
  • ½ cup fresh lemon juice
  • 3 plum tomatoes, diced
  • 1 cup hearts of palm, ¼ inch sliced
  • 1 cup red onion, finely chopped
  • 1 cup cilantro, chopped
  • 1 jalapeno pepper, seeded and finely chopped
  • 1 avocado, peeled, pitted and diced
  • Hot sauce, to taste
  • Kosher salt and freshly ground black pepper
Preparation Steps:
  1. Place the shrimp and lime juice into a large bowl, and stir to coat.
  2. Let stand until the shrimp are opaque.
  3. Stir in remaining ingredients.
  4. Season to taste with salt and pepper.
  5. Cover and refrigerate for 1 hour.
  6. Serve with tortilla or plantain chips.

The shrimp could also be poached in salted water until opaque and then chilled in ice water. Drain and combine with remaining ingredients.
